These baby artichokes come from lower down the plant and although fully mature, their petals remain softer than the larger ones. In addition, they do not have a choke in the centre making it possible to eat virtually all of it.
After beingย carefullyย cleaned they areย cookedย slightlyย and soakedย in Extra Virgin olive oil.ย Thisย traditional processingย is able toย preserveย all the tasteย of the raw artichoke.
